鹹湯圓 Salty Dumplings

材料
糯米糰 150克
豬絞肉200克
蔥花 10克
薑末 5克
紅蔥酥 2大匙

Ingredients
150 grams of glutinous rice dumpling
200 grams minced pork meat 
10 grams green onions
5 grams ginger powder
2 tablespoons of crisp red shallot flakes

調味料
鹽 1/4茶匙
細糖 1/2茶匙
醬油 1大匙
五香粉 少許
白胡椒 1/4茶匙
香油 2茶匙
太白粉 1茶匙

Seasoning
1/4 teaspoon salt
1/2 teaspoon granulated sugar
1 tablespoon, soy sauce
Five-spice pepper
1/4 teaspoon white pepper
2 teaspoons sesame oil 
1 teaspoon cornstarch 

湯料
肉絲 60克
蝦米 10克
香菇絲 15克
高湯 600CC
茼蒿菜 50克
紅蔥末 1大匙
鹽1/4茶匙

Packaged soup mix
60 grams minced meat 
10 grams shrimp 
15 grams mushrooms
Soup Stock 600CC
50 grams Chinese Chrysanthemum
1 tablespoon chopped red scallions
1/4 teaspoon salt

做法
1. 豬絞肉加入鹽攪拌至有黏性,加入細糖、醬油、五香粉、白胡椒拌勻。再加入紅蔥酥、香油及太白粉拌勻成肉餡。
2. 將米糰分成約20克的小糰,搓成圓球,用指尖下壓成中間凹陷圓形,放入少許餡料包成圓形湯圓備用。
3. 熱鍋下少許油,炒香肉絲、蝦米、香菇絲及紅蔥頭末。
4. 加入高湯及鹽煮滾後加入茼蒿菜裝碗備用。
5. 燒一鍋水,湯圓入鍋煮至浮起熟後加入煮好的湯中即可。

Preparation Method
1. Mix the salt into the pork meat and stir until sticky, add sugar, soy sauce, five-spice powder, white pepper and mix well. Add in the crisp red shallot and green onions, sesame oil, and cornstarch,  mixing it all into the meat.
2. Cut the glutinous rice into segments of roughly 20 grams and form them into balls. Press in with your fingertips to form a hole in the middle and flatten it out into a circle. Put in a little stuffing to make dumpling packets and set aside.
3. Heat a frying pan with a little oil and saute the pork, shrimp, mushrooms and red shallots.
4. Add soup stock and salt and bring to a boil. Afterwards add the Chinese Chrysanthemum then pour into a bowl and set aside.
5. Boil a pot of water. Let the dumplings float in the pot and cook until done. Finally, add them into the bowl of cooked soup.
